4-Ingredient pork satay & veggie stir-fry

Ingredients

  • 400g pork extra lean pork stir-fry (see tips)
  • 2 tablespoons peanut or vegetable oil
  • 300g-400g packet fresh stir-fry vegetables (see tips)
  • ¾ cup store-bought satay stir-fry sauce (or use your favourite stir-fry sauce)
  • Rice or noodles, to serve

Method

  1. 1.
    Pat pork dry with paper towel.
  2. 2.
    Heat a wok over high heat. Add 1 tablespoon oil and swirl around the wok.
  3. 3.
    Stir-fry pork in 3 batches for 2-3 minutes until just cooked through. Transfer to a plate.
  4. 4.
    Heat the remaining oil in the wok. Add vegetables. Stir-fry for 2 minutes. Add 2 teaspoons water. Quickly cover and cook for 30 seconds or until vibrant.

    Add stir-fry sauce. Stir-fry for 1-2 minutes until hot.
  6. 6.
    Serve with rice or noodles.

General Information

You can swap out the extra lean pork stir fry with pork loin steaks cut into ½ cm-thick strips. 

There is a wide range of ready-prepared fresh stir-fry veggie mixes in supermarkets. The packet size can vary. You can use any mix of vegetables or stir-fry sauce you like for this easy recipe.
