Ham and Zucchini Slice

Ingredients

•200g leftover Christmas ham, roughly chopped, plus extra 50g, thinly sliced

•1 Tablespoon olive oil, plus ¼ cup olive oil extra

•1 Large onion, finely chopped

•3 Medium zucchini, grated

•1 Cup grated cheddar cheese

•1 Cup self-raising flour
-
•2 Tablespoon finely chopped flat-leaf parsley, plus extra leaves to serve

•5 Eggs

•Dill Sprigs and salad leaves to serve
Method

1.Preheat oven to 160C fan-forced (180C conventional). Grease a 20cm x 30cm lamington pan and line base sides with baking paper.

2.Heat a medium frying pan on medium heat. Add onion and cook, stirring, for 5 minutes or until onion softens. Transfer to a large bowl to cool for 5 minutes.

3.In a large bowl combine zucchini, ham, cheese, flour, parsley and onion. Stir to combine.

4.In a separate bowl lightly whisk the egg and remaining oil and stir to combine. Season with salt and pepper.

5.Stir egg mixture into zucchini mixture, then spoon into the prepared pan and smooth the surface. Arrange extra ham slices on top.

6.Bake for 40 mins or until firm to the touch. Set aside to cool on a wire rack. Cut into pieces and serve topped with extra flat leaf parsley, dill and accompanied with salad leaves.
