Mexican Style Air Fryer Pork Sausage Hot Dogs

Ingredients

  • 6 (about 500g) Australian pork sausages
  • 300g fresh shredded coleslaw mix
  • 2 tablespoon mayonnaise or coleslaw dressing
  • 1 large ripe avocado
  • 2 teaspoon lemon juice
  • 6 hot dog rolls, warmed
  • 1/3 cup tomato salsa
  • ½ cup grated tasty cheese

Method

  1. 1.
    Preheat your air fryer to 180°C if required. Place pork sausages in a single layer in the air fryer basket. Air fry at 180°C for 10-12 minutes (depending on thickness) until golden and cooked through. Drain on paper towel.

    While sausages are cooking, combine coleslaw mix and mayonnaise in a bowl. Toss until well combined.
  3. 3.
    Halve avocado and scoop flesh into a bowl. Add lemon juice. Mash avocado.
  4. 4.
    Slice rolls lengthways through the top (don’t cut all the way through). Spread cut-sides with avocado. Top each with coleslaw and a sausage. Drizzle with tomato salsa, sprinkle with cheese and serve.

    Note - for an extra kick of flavour, add a drizzle of peri peri or hot chilli sauce if liked.
