Orange & honey glazed pork stir-fry

Ingredients

  • 500g pork loin steaks, cut into 2cm strips
  • 2 tablespoons cornflour
  • 2 ½ tablespoons peanut or vegetable oil
  • 1 medium brown onion, finely chopped
  • 3 finely chopped garlic cloves or 2 teaspoons garlic paste
  • 150g snow peas, trimmed and halved diagonally
  • Sliced green onions and toasted sesame seeds, to serve

Orange & honey glaze

  • ½ cup coconut aminos seasoning, salt-reduced soy sauce or tamari (see tips)
  • ½ cup freshly squeezed orange juice
  • 1/3 cup honey
  • 1 teaspoon finely grated orange zest
  • 1 tablespoon Thai sweet chilli sauce
  • 2 teaspoons sesame oil

Method

  1. 1.
    To make the orange & honey glaze, combine all ingredients in a bowl. Whisk until well combined. Set aside.
  2. 2.
    Pat pork dry with paper towel. Place pork into a bowl. Sprinkle with 1 tablespoon cornflour. Toss pork until lightly coated. Blend the remaining 1 tablespoon cornflour with 2 tablespoons of warm water and set aside.

    Heat a wok or large frying pan over high heat. Add 1 ½ tablespoons oil and swirl around the wok. Spread half the pork in a single layer around the wok and cook, turning once, for 2-3 minutes or until golden and seared on both sides. Repeat using the remaining pork. Transfer to a bowl.
  4. 4.
    Heat the remaining oil in the wok. Add onion and garlic. Stir-fry for 1-2 minutes until tender.
  5. 5.
    Add the glaze and cornflour mixtures. Reduce heat to medium and simmer, stirring occasionally, for 3-4 minutes or until thickened and reduced by a half.

    Add pork and juices and snow peas. Stir-fry for 1-2 minutes until hot.
  7. 7.
    Sprinkle with green onions and sesame seeds. Serve with rice.

Coconut aminos seasoning is a tasty salty sauce that is made from the sap of the coconut flowers. It has a natural ‘umami’ flavour that is perfect in Asian-style dishesIt’s available in the health food/gluten-free section in supermarkets.  Soy sauce or Tamari can be used in its place.
