Pork Belly Popcorn

Ingredients

•750g pork belly, skin removed and cut into 2-3cm squares

•½ cup cornflour

•2 teaspoons smoked paprika

•2 teaspoons ground cumin

•2 teaspoons sea salt flakes

•½ teaspoon finely ground white pepper

•¼ teaspoon finely ground black pepper

•vegetable oil, for deep frying

•lemon wedges and chilli sauce, to serve
Method

1.Combine cornflour, paprika, cumin, coriander, sea salt, white pepper and black pepper in a bowl. Add pork belly to spice mixture and toss until lightly coated.

2.Heat oil in a saucepan over medium heat. Deep-fry pork in batches for 4-5 minutes or until golden and crisp. Transfer to a tray lined with paper towel and keep warm. Repeat with remaining pork.

3.Serve pork with lemon wedges and chilli sauce.
