Pork Sausage Tacos

Ingredients

  • 8 Australian pork sausages
  • 2 Teaspoons mild taco seasoning
  • 2 Tablespoons olive oil
  • 12 small or 8 regular tortillas, warmed
  • 300g bag fresh finely shredded coleslaw
  • 200g grape tomatoes, sliced
  • 1 just-ripe avocado. stoned, peeled and diced

To serve

  • Sour cream
  • Tomato salsa
  • Lime wedges
  • Coriander sprigs

Method

  1. 1.
    Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Place sausages onto the tray.
  2. 2.
    Combine taco seasoning and oil. Brush mixture over sausages, turning to coat. Bake, turning once, for 25-30 minutes or until golden brown and cooked through.

    Transfer sausages to a board and slice diagonally. Top warmed tortillas with coleslaw mix, tomatoes, sliced sausages and avocado. Serve with sour cream, tomato salsa, lime wedges and coriander.
