Pork Sausage Tacos

Ingredients

•8 Australian pork sausages

•2 Teaspoons mild taco seasoning

•2 Tablespoons olive oil

•12 small or 8 regular tortillas, warmed

•300g bag fresh finely shredded coleslaw

•200g grape tomatoes, sliced

•1 just-ripe avocado. stoned, peeled and diced
To serve

•Sour cream
-
•Tomato salsa
-
•Lime wedges
-
•Coriander sprigs
Method

1.Preheat oven to 220°C/200°C fan-forced. Line a baking tray with baking paper. Place sausages onto the tray.

2.Combine taco seasoning and oil. Brush mixture over sausages, turning to coat. Bake, turning once, for 25-30 minutes or until golden brown and cooked through.

3.Transfer sausages to a board and slice diagonally. Top warmed tortillas with coleslaw mix, tomatoes, sliced sausages and avocado. Serve with sour cream, tomato salsa, lime wedges and coriander.
