Sweet & sour pork mince stir-fry

Ingredients

•¼ cup peanut or vegetable oil

•440g can pineapple slices in natural juice, drained, cut into 2cm pieces and dried on paper towel

•1 brown onion, finely chopped

•1 small red capsicum, seeded and cut into 1cm-diced pieces

•500g pork mince
-
•270g jar sweet & sour sauce (see tips)

•1 ½ tablespoons soy sauce

•Rice and toasted sesame seeds, to serve
Method

1.Heat a wok over high heat. Add 1 tablespoon oil and swirl around the wok. Add pineapple. Cook, turning occasionally, for 3-4 minutes until lightly golden. Transfer to a plate.

2.Add 1 tablespoon oil, onion and capsicum to the wok. Stir-fry for 2-3 minutes or until tender. Transfer to the plate with the pineapple.

3.Heat the remaining 1 tablespoon oil in the wok. Add pork. Stir-fry, breaking up the mince with a wooden spoon, for 4-5 minutes until lightly browned.

4.Add sweet and sour sauce and soy sauce. Stir to combine and bring to the boil. Cook for 1 minute.

5.Toss through pineapple, onion and capsicum.

6.Serve with rice and sesame seeds.
