Sweet & sour pork mince stir-fry

Ingredients

  • ¼ cup peanut or vegetable oil
  • 440g can pineapple slices in natural juice, drained, cut into 2cm pieces and dried on paper towel
  • 1 brown onion, finely chopped
  • 1 small red capsicum, seeded and cut into 1cm-diced pieces
  • 500g pork mince
  • 270g jar sweet & sour sauce (see tips)
  • 1 ½ tablespoons soy sauce
  • Rice and toasted sesame seeds, to serve

Method

  1. 1.
    Heat a wok over high heat. Add 1 tablespoon oil and swirl around the wok. Add pineapple. Cook, turning occasionally, for 3-4 minutes until lightly golden. Transfer to a plate.

    Add 1 tablespoon oil, onion and capsicum to the wok. Stir-fry for 2-3 minutes or until tender. Transfer to the plate with the pineapple.
  3. 3.
    Heat the remaining 1 tablespoon oil in the wok. Add pork. Stir-fry, breaking up the mince with a wooden spoon, for 4-5 minutes until lightly browned.
  4. 4.
    Add sweet and sour sauce and soy sauce. Stir to combine and bring to the boil. Cook for 1 minute.
  5. 5.
    Toss through pineapple, onion and capsicum.
  6. 6.
    Serve with rice and sesame seeds.
